How to Cut Your Avocado Properly to Get the Greatest Nutritional Value

DSC_2777Here at The City Farm, an avocado is a superfood we come in daily contact with. Our range of CF exclusive products incorporate avocado properties, such as avocado oil in our Hand Cream or avocado infused Honey. However, consuming an avocado provides the maximum sensation in terms of touch, sight, smell and taste.

We are all about efficiency here at CF, so we have been searching for the ideal way to consume avocados. We would like to share some great tips about cutting your avocado properly to receive the greatest nutritional value, from the Food & Wine website:

Here are the five steps to cut an avocado:

1. Cut vertically all the way around the pit of the avocado.

2. Twist both sides separately.

3. Remove the pit from one side by hacking the pit with a knife, twisting slightly to the left while lifting the pit out of its pocket.

4. Cut your two avocado halves into four quarters.

5. Instead of digging in with a spoon, peel the skin from the flesh. The skin will come off smoothly, keeping the healthy dark green flesh in tact.

Avocado Soup

I have been making this Avocado Soup recipe for years! It’s very rich, so small servings are ideal. Enjoy!

Ingredients:

1 13-3/4-oz. can chicken broth

2 medium avocados, seeded, peeled, and cut into chunks

2 Tbsp. dry sherry

1/2 tsp. salt

1/4 tsp. onion powder

1/8 tsp. dried dill weed

3/4 cup light cream

Directions:

In blender container combine chicken broth, avocado chunks, dry sherry, salt, onion powder and dill weed.

Cover; blend until mixture is smooth. Stir in light cream.

Turn into refrigerator container.

Cover; chill well.

Top each serving with slices of avocado or dollops of sour cream, if desired.

How to Pick the Perfect Avocado

Avocado picking is in full force at The City Farm! From our farm to markets across the US, Greatist offers great tips on how to pick the perfect avocado.  Enjoy!

1. Check the skin.

The bumpy alligator skin of a typical Hass avocado starts out dark green and ripens to eggplant color, says licensed nutritionist Monica Reinagel, author of Nutrition Diva’s Secrets for a Healthy Diet. This hue is key. If you’re looking for an avocado you can eat tonight, you want one with dark green to purple-y or brown skin. If you’re looking to stock your kitchen with a few fruits you can eat later, shop for one that’s mid to dark green. Then make sure there aren’t any deep scratches or scrapes on the outside that could affect the fruit inside.

If you spot larger, smoother, leather-y avocados that are bright Kelly green, those are the Florida variety. “These have less fat and more water, so they’re lower in calories but also not quite as creamy. Unless a recipe specifically says Florida avocado, I always assume to use ‘Hass,’” Reinagel says. The color also stays more or less the same as it ripens, so use the steps below to pick the perfect Florida fruit.

2. Give it a squeeze.

Press down on the avocado with your thumb. A good one will have a little give rather than feeling like you’re pressing against a wall. “Ripeness is best determined by pressure because softening of the fruit can happen at any rate, independent of the color,” says Emiliano Escobedo, executive director of the Hass Avocado Board. But don’t make the mistake of thinking more give equals more goodness. If your thumbprint stays indented or the flesh feels squishy, skip it, as it’s likely overripe, Escobedo adds.

3. Peek under the stem.

Here’s a trick that’s circulating around the Internet: If you pop the little button stem off the top end of the avocado, it’ll tell you if the avocado is a good candidate. If the skin under it is green, you’re good to go. If the skin under it is brown, it’s past its prime. But there’s a huge caveat: “When you pop off the stem, you allow air to enter into the avocado, which can cause premature oxidation and browning. So leave those stems on until you’re ready to eat the avocado,” Reinagel says. Removing the stem at the store can also create an opportunity for the avocado to rot without ripening, says Mary Dawn Wright executive research chef of the Sabra Dipping Company.

When You’re Too Busy To Make Breakfast

When I need something in a hurry for breakfast or lunch, Avocado Toast is my go-to meal.  It’s quick, delicious and satisfying, and according to avocadocalifornia.com, “There’s more to avocados than great taste. Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a ‘nutrient booster’ by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with it.”  Enjoy!

AVOCADO TOAST

INGREDIENTS
1 ripe avocado
Salt
Fresh lemon or lime
Thick sliced whole grain bread

Scoop half an avocado into a bowl.  Add a sprinkling of salt and a squeeze of fresh lemon or lime juice.  Mash with a fork.  Toast a thick slice of whole grain country-style bread, then spread the avocado on top.  That’s all there is to it.

Freeze Your Avocados for Year Round Flavor

We love our avocado grove here at The City Farm – from the shade of the trees to the bees it attracts, to the delicious honey we harvest, the trees provide for us.  And we took note as the 2013 / 2014 winter’s polar vortex wreaked havoc on most of the U.S., and snowstorms and ridiculously cold temperatures raised the costs of heating homes, snarled traffic and travel, and caused Chipotle to issue a “guacamole warning.”

It sounds like a bad joke, like when it starts to sprinkle in Southern California and the local newscasters use terms like “Storm Watch, 2014.”  But when it comes to losing the side of guacamole on your lunch-break burrito?  Things are getting serious. Fast.

According to NPR, who covered the restaurant chain’s threat to abandon the avocado due to the drought in California, as well as the reported freezes in Mexico that made prices for the fruit skyrocket, Chipotle “goes through a staggering amount of avocados to make its fresh guacamole – 97,000 pounds of avocados every day. That adds up to 35 and a half million pounds of avocados every year.”

Basket of home-grown avocados from The City FarmIt’s hard to wrap one’s mind around that many avocados. (Yummm.. wrap … burrito…) But. For most of us who enjoy a daily slice on piece of toast with goat cheese, the rising cost of avocados is disconcerting news.  Especially as we’ve learned of late how great the healthy fats are that we get from them: from adding shine to your hair, a glow to your skin, the healthy omega-3 fatty acids and the insoluble fiber that keeps your colon regulated.  Avocado oil is also great to cook with, as we learned from Prevention.com, it is high in mono-unsaturated fats that help lower “bad” LDL cholesterol and increase “good” HDL, as well has having a high smoke point (520°F), which makes it a great oil for stir-frying, sauteing, roasting, and even baking.

How does an avocado nut prepare for the higher-priced off season? First step: check your freezer.  Do a little (late) spring cleaning, and make some space for frozen avocados.  That’s right.  Like bananas, you can freeze your fruit, and have it ready for guacamole on game day or – really? Just chips & guac night, is all you need to celebrate with the tasty treat.  While avocados are in season, typically in the summer, make some room in your freezer, and then follow these steps from the Huffington Post to save some for those winter months when you’re craving guacamole, or even ice cream.

Wash the avocado, skin still on.

Cut the fruit in half, and peel.

If you are opting to keep them as halves, put them in a Ziploc bag and freeze.

If you’re pureeing, either mash the avocados with a fork or in a food processor with a little bit of lime or lemon. Store in a re-sealable bag and freeze.

As the HuffPo author notes – frozen avocados will fade, so don’t expect them to be party-friendly for display in slices. But they will perfectly blend into your guacamole, or with a frozen banana for the texture and taste of ice cream. Lauren Conrad’s site features a face and hair mask made of avocado and apple cider vinegar, and a promise that “both of which will make your hair shiny and soft and add a glow to your skin.”  The facial includes honey, so be sure to order your City Farm Avocado Honey, to make the cycle complete!

Sesame Chicken with City Farm Avocado Honey Dip

I love The City Farm’s Avocado Honey.  It’s just delicious, and unlike mass-produced commercial honey, which can be thick as old glue, City Farm Honey is smooth and easy to transfer to a measuring cup when you are using it in a recipe.

The following appetizer recipe for Sesame Chicken with Honey Dip came from a neighbor of mine when I lived in Aspen.  I also like to make this with whole boneless chicken breasts as a main course.  If you are making it as a main course, coat the raw chicken with the mayonnaise mixture, then the crumb mixture.  Bake at 350 degrees until done.  Be sure to make plenty of honey dipping sauce. It’s so good.

Sesame Chicken with City Farm Avocado Honey Dip

½ cup Best Foods mayonnaise
1 tsp. Dry mustard
1 tsp. Instant minced onion
½ cup fine dry bread crumbs
1/4 cup sesame seeds
2 cups cubed cooked chicken

Mix first 3 ingredients, set aside.

Mix crumbs and sesame seeds.

Coat chicken with mayonnaise mixture, then crumb mixture.

Place on baking sheet.

Bake in 425° oven for 12 minutes or until lightly browned.

Serve hot with dip.

Mix 1 cup Best Foods mayonnaise with 1/4 cup of City Farm Avocado Honey

Ripen your avocados, today!

For me, food is fun. Avocados, a new favorite of mine have also become subject to my food experimentation’s. I use them in smoothies (right? Forget the Kale—an avocado still makes your smoothie green, and it tastes a lot better. Don’t get me wrong—Kale absolutely has its place in my cookbook.) baked goods, puddings, soups, salads, sauces, ice cream— it’s safe to say they’re perfect on their own; too.

There are few things better than a ripe avocado; but there’s nothing worse than needing your green goddess to ripen in the next day when it’s as hard as a rock. This of course, usually happens when I have the spare 10 minutes to scramble the ingredients before I jolt out the door.

If you find yourself in this dilemma where you need to speed up the ripening process (via Vivian Tran’s article in XYZ magazine):

1)      If you have 24 hours: Place avocados in a brown paper bag with a banana, then leave the bag on a sunny windowsill for 18-24 hours. Together the banana and avocados release a large amount of ethylene gas which can quicken ripening.

2)      If you have less than 24 hours: Place two peeled pitted avocados in a blender with 1 cup of peas (fresh, frozen, or thawed) and pulse until smooth. The peas will help soften the consistency of the unripe avocados but won’t affect the flavor.

Harvesting A Secret Life of Bees

It wasn’t so much the sound of the swarm, as I couldn’t hear the persistent buzz of bees in my closed-off, closed-out box of an apartment. It was the movement that caught my eye, a dark swarm of over 100 bees moving in a slow cyclone outside my window, fascinating and a little frightening. I had just read Sue Monk Kidd’s “The Secret Life of Bees,” so I knew I was to show them love. Easier to do from the safe haven inside my home.

“I hadn’t been out to the hives before, so to start off she gave me a lesson in what she called ‘bee yard etiquette’. She reminded me that the world was really one bee yard, and the same rules work fine in both places. Don’t be afraid, as no life-loving bee wants to sting you. Still, don’t be an idiot; wear long sleeves and pants. Don’t swat. Don’t even think about swatting. If you feel angry, whistle. Anger agitates while whistling melts a bee’s temper. Act like you know what you’re doing, even if you don’t. Above all, send the bees love. Every little thing wants to be loved.” – The Secret Life of Bees

It was recently Bee Week this past May, hosted by Whole Foods and Modern Farmer (MF). As MF noted, “almond groves, apple orchards, pumpkin fields – all require pollination from bees in order to bear fruit. Starting in 2006, beekeepers across North America and Europe began reporting that anywhere from 30 to 90 percent of their hives were dying off.”

If you’ve contemplated bringing the bees back by donning long sleeves and keeping your own hives, check out MF’s piece on which bee is right for you.   But if you simply want to show bees how much you love them by growing the green that attracts them to your hood, encouraging pollination and backyard bee life in general, take a look at The Daily Green’s list of bee-friendly plants. They recommend you choose as many native plants as possible.

My favorite bee-friendly flower? Sunflowers in a wild or tame garden: tall, rangy, happy looking plants, they seem to take on a life of their own, beaming and radiant.  Their colors are so bee-ish, it seems the perfect fit. Not surprisingly, sunflowers need full sun, and they like long, hot summers to flower best. According to the Farmer’s Almanac, “plant the large seeds no more than 1 inch deep and 4 to 6 inches apart in well-dug, loose soil after it has thoroughly warmed, from mid-April to late May. …Water plants deeply but infrequently to encourage deep rooting.”

As City Farm’s avocado groves give us endless California Hass Avocados, avocado trees also give an equally sweet gift, and I’m not talking about guacamole!

We are proud to announce the debut of our newest City Farm exclusive, 16 ounces of California harvested Avocado Honey.

This  honey has a place in my heart and in my pantry. I use it in sickness and in health; perfect for teas with a sore throat, to spread on bread for a light breakfast and used as an alternative sugar in many chocolate filled desserts. All Hail Avocados!

photo 4As one of City Farm’s defining features, our 2,000 tree avocado orchards supply us with thousands of pounds of California Hass avocados each year. Avocados can be store bought year-round, however their season and City Farms best avocados are ripest from May through late summer. Our dinner recipes have been filled with avocado infused courses. Creamy avocado soup, gazpacho, and classic guacamole are just the beginning! I will openly admit that I enjoy them plain—simple foods are my favorite.

Mother’s Day marked the beginning of our picking season. Over this past five days we’ve picked about 40,000 pounds (yes, pounds!) of avocados from our groves. That number may seem hard to believe; but when one tree can give up to 1,000 pounds–we’ve got so much more green goodness ahead. Hoping to pick another 90,000 pounds this season our crop grows bigger and more bountiful each year. I take kind care of my groves, this year they really took care of me; too. I’ll send more updates to you as we keep picking, and please share your avocado recommendations with me! Take care and Enjoy ~

An Abundance of Avocados

How did you celebrate Cinco de Mayo? If you carved into the green flesh of yummy avocados to make fresh guacamole, you can keep the green growing! Don’t throw away that pit, plant it.

I remember being baffled as a kid, seeing a shiny stone, pierced by toothpicks, held aloft in a juice glass of water.  How could that shiny, seemingly impenetrable pit grow into a soft, green, fleshy fruit defended by dinosaur-like skin? It’s a glimpse of magic to watch a seed sprout above ground, before your eyes.

Inhabitat.com gives a great play by play for growing an avocado tree from your pit: how to gut your ‘cado without splitting the skin of the seed, how to determine which end is the “bottom” which will root in water, and which is the top, which will sprout. How to gently wash the pit (does licking it clean count?)

After taking good care of this oversized seed that will yield your yummy bounty, it’s time to stab your pit.  Using four toothpicks, Inhabitat’s Jill Fehrenbacher suggests you angle them slightly downward, wedged firmly into the pit, so that the bottom will rest easily in the water, and the toothpicks rest soundly on the rim of the glass.

Set the glass on a well-lit windowsill for the sun to do its work.  Step back, and admire your work as co-creator of a future tree.  A TREE.  This is a good time to name your seed.  (See my earlier post, Greening Your Cubicle, for my attachment issues desk plants’ name.)  If you’re like me, it never fails to amaze that I get to play a small part in helping green things grow.  And then EATING them.  (So don’t get too attached.)

Enjoy: Easter

One of the sweetest times of year to spend with family, friends and some little yellow peeps, I love Easter. This year at The City Farm we decided to enjoy our Easter with each other by creating an imaginative twist on Easter desserts! Based on a traditional chocolate pudding recipe, we infused our signature with some Avocados straight from our groves and of course, the soon to debut City Farm Avocado Honey. I have a sweet tooth with a different twist, gravitating towards non-dairy options we provided you with both a non-dairy pudding–and one that tastes just a tad bit richer!

To make our non-dairy Chocolate Avocado pudding, you will need:

6 ripe avocado, peeled and flesh removed from pit

1/2 cup quality cocoa powder (100% pure cacao)

1/2 cup pure honey (soon to be City Farm!) 

1/2 cup coconut milk

3 1/2 tsp pure vanilla extract 

Prep time, about 10 minutes. I’m a fan of quick sweet eats. Place all items in mixing bowl, simply mix together with a hand or stand mixer. This recipe will make approximately 6 – 8 half cup servings. This recipe is 100% free of dairy and any refined sugar additives.

For traditional Avocado Chocolate Pudding, use the following ingredients:

One pack of Jello chocolate mix and 3 cups of whole milk.   Mix well, and chill!

I have this silly tradition of starting and ending my week with one favorite treat; I like to enjoy my food! While watching what I eat is an equal concern, I came across this article today and it brought great comfort to one of my guilty  pleasures, homemade chips and guacamole.

Courtesy of the examiner.com and Debbie Nicholson, a study was released examining the health benefits of daily consumption of avocados. Researchers conducted a survey among 17,567 men and women aged 19+. Results showed that 347 adults that consumed about 1/2 of a medium sized avocado within 24 hours showed increased intake in nutrient levels. Specifically, “36% more dietary fiber, 23% more vitamin E, 13% more magnesium, 16% more potassium and 48% more vitamin K than non-consumers”.

Green Goddess Unexpected: Avocado Soup.

When I was eight years old, my mother called me into the kitchen for “a taste of something special.” Half an avocado, with the pit still in it, lay on the sink, and on a plate the other half was laid out in slices. She cut a slice in half, and placed it on a crisp cracker. She added a sprinkling of kosher salt and held it out to me.

“Taste this,” she said.   I put the whole thing in my mouth.

And so began my love affair with avocados. They are fabulous in salads and omelettes. And I think guacamole ought to be a separate food group! I still like them plain…on a crispy cracker with a little salt. Here is one of my favorite avocado recipes. I have been making this soup for years. It’s very rich so keep the servings small. Enjoy! Avocado Soup
1 (13 3/4 – oz.) can chicken broth
2 medium avocados, seeded, peeled, and cut into chunks
2 Tbsp. dry sherry
1/2 tsp. salt
1/4 tsp. onion powder
1/8 tsp. dried dill weed
3/4 cup light cream

In blender container combine chicken broth, avocado chunks, dry sherry, salt, onion powder and dill weed. Cover; blend until mixture is smooth. Stir in light cream. Turn in to refrigerator container.

Cover; chill well. Top each serving with slices of avocado or dollops of sour cream, if desired.
